Crafted in collaboration with chef Adriana Cavita and artist Paola Estrella, this isn’t just a new release. It’s a beer shaped by memory, heritage and the ingredients that define everyday life.
What Makes a Mexican Lager?
Mexican lager is one of the world’s most recognisable beer styles, known for its light body, crisp finish and refreshing character. Traditionally brewed with corn (maize), it delivers a subtle sweetness that balances its clean, bright profile.

A Beer Inspired by Adriana Cavita’s Childhood
At the heart of this collaboration is chef Adriana Cavita, whose cooking is deeply rooted in the flavours of her upbringing in Mexico.
For Adriana, corn and rice weren’t just ingredients, they were the rhythm of everyday life. They formed the base of family meals, shared moments and lasting food memories.
Those same ingredients now define both her cuisine and this beer.
By using corn sourced from Mexico, we’ve created a lager that carries that same sense of familiarity and authenticity, with a flavour that’s as much about memory as it is about taste.
From Kitchen to Brewery: Craft Meets Culture
Brewing with maize isn’t simple. It requires precision, patience and technical skill. But the payoff is unmistakable.

The Story Behind the Label: Iztaccíhuatl, the “Sleeping Woman”
The storytelling doesn’t stop at the beer itself.
Artist Paola Estrella’s label design draws inspiration from Iztaccíhuatl, the iconic Mexican volcano known as the “Sleeping Woman.”
For Paola, who grew up in Mexico City, the mountain was more than a landmark. Its visibility depended on air clarity - a symbol of a “good day” and a reminder of environmental fragility.
That idea carries through into the beer:
- Clarity and freshness reflected in the liquid
- Nature and landscape echoed in the brewing process
- Movement and connection between Mexico and the UK
Hand-drawn in charcoal, the artwork embraces raw, tactile materials and is inspired by traditional cooking methods and the use of fire in Mexican cuisine. Surrounding corn fields ground the design in agriculture, heritage and sustenance.
