Brewing beer hasn't changed much over the centuries—mostly, it's water, malted barley, hops, and yeast. The difference with our award-winning, mid-strength beers is in the details, as it can be tricky to achieve a full-bodied mouthfeel and aroma without higher alcohol levels.
Many breweries strip out alcohol or dilute their beers after fermentation to reach a lower ABV, which can flatten flavour. We do it differently. Our reviews speak for themselves; when it comes to taste, we are the best.
BIG THINKING IN ACTION
Instead of removing alcohol or watering down our brews, we brew to strength. Our recipes are carefully measured so that the final ABV (up to 2.8%) is the same as what's produced naturally during fermentation. This approach protects the flavour, as no extra steps exist to remove or dilute alcohol. Our beer also maintains the body, as we don't need additives like maltodextrin or lactose to compensate for lost mouthfeel.
Sure, we could have found a shortcut with an off-the-shelf system, but our co-founder Felix believed a custom kit was essential to brew the best small beer in the world. When in early 2017, he took the blueprints to the very best brewing equipment fabricator in the country, the initial response came back:
"You won't be able to brew beer on this. How about you opt for one of our existing designs?"
Undeterred, Felix pressed on, determined to focus on flavour over alcohol content. As he said:

BUILDING THE BESPOKE KIT
It took months of planning, courage, plumbing, and welding to bring Felix’s vision to life. By late 2017, the new kit was ready to produce our very first Small Beer Lager—fully brewed and fermented at a mid-strength. After six weeks of cold conditioning, we tasted our crisp, balanced Lager for the first time in early 2018. The result was that a lower ABV can pack all the flavour you’d expect from a regular beer.
