Our pilsner style beer goes through a process known as long lagering, which derives from the German word ‘lager,’ which means ‘to store.’ After fermentation, we store the beer in cold tanks for a minimum of six weeks, which is much longer than most commercial breweries. It’s during this extended resting period that the beer develops its beautifully balanced flavour.
